But it is also best served as a main dish with a side of steamed rice.

Preparation:

  1. Cut the pork belly into about 2-inch cubes. Then put it in a mixing bowl, preferably with a lid.

  2. Add garlic, soy sauce, and sugar. Mix, then cover the lid and marinate for at least 2 hours or overnight in the fridge.

  3. Peel and mince the onions and garlic.

Cooking:

  1. Heat oil in a pot over medium heat. Saute the onion until it softens, then add the remaining garlic and saute until light brown and aromatic.

  2. Add the marinated pork and cook on all sides just until lightly browned. Stir in the marinade liquid, cooking wines, and ketchup; allow to cook for 2 minutes.

    Note: Cooking wine is optional.
  3. Pour water into the pan and add the star anise. Let it boil.
