Preparation:

  1. Slice the pork belly into strips.

  2. Peel, chop, and mince the spices needed for the recipe.

  3. If using a fresh coconut. Secure the first press with the thick coconut cream; the second press is the coconut milk.

Cooking:

  1. Heat cooking oil in a large skillet over medium heat. Saute the garlic, onion, and ginger.

  2. Add the pork saute together with the spices and cook for 5 minutes, or until light brown.

  3. Add the alamang (shrimp paste). Then stir in the coconut milk and bring it to a boil.

  4. Lower the heat and cover the lid, then simmer for 10 minutes.

  5. Add the red and green chili peppers, cover again, and cook until half the liquid has evaporated.

  6. Pour in the coconut cream and continue cooking until the sauce becomes slightly thick and oil comes out of the cream.

  7. Season with salt and ground black pepper. Test the sauce and adjust as necessary.

  8. Turn off the heat and transfer to a serving dish. Serve hot, share and enjoy the food. Happy cooking!
