Preparation:

  1. Gather all the ingredients necessary for the recipe.

  2. Cut the beef into serving pieces. Peel and chop the spices and vegetables for the recipe.

Cooking:

  1. Heat cooking oil in a pan or wok over medium-high heat. Add the potatoes and carrots and pan fry halfway until they turn light brown and the edges are seared. Take it out of the pan or wok and set it aside.

  2. In the same pan or wok with the remaining oil, add the onion and saute until soft, then add the garlic and saute until fragrant.

  3. Add the beef and saute with the spices for 5 minutes, or until the color changes to light brown.

  4. Add water, dried bay leaves, and cracked peppercorns. Bring the liquid to a boil. Add Beef broth bouillon cubes if desired.

  5. Lower the heat to medium-low. Cover the lid and simmer for 1 to 2 hours, or until the meat gets tender. Add water as needed.

    Note: Use a pressure cooker if available to shorten the time. It takes only 30 minutes to get the meat tender.
  6. Check it once the meat is tender enough but not falling apart from the bones. Stir in the liver spread and tomato sauce. Then simmer again, covered, for 10 minutes.

  7. Add the pan-fried potatoes and carrots. Then add the bell pepper, olives, and chili flakes. Stir and continue to cook for 5 minutes more.

  8. Season with salt and pepper to taste. Adjust accordingly. Stir and cook for a few minutes.

  9. Turn off the heat and transfer to a serving dish.

  10. Serve with warm, steaming rice. Enjoy!
