Description
This Calderetang Kambing recipe, or Kaldereta, is Filipino goat stew. The dish is made of goat meat, cooked until tender, and simmered with tomato-liver sauce along with spices and vegetables. Clean and cut the goat meat into serving portions.
Put it in a large mixing bowl and add vinegar, salt, and ground black pepper. Hand mix, then marinate the goat meat for at least an hour.
Meanwhile, prepare the spices and vegetables needed for the recipe.
Cooking
Heat cooking oil in a pot or casserole. Saute the garlic until aromatic; add the onion and tomatoes and saute until soft.
Note: Add Thai chili peppers if desired for a spicy taste.Add the marinated goat meat; disregard the liquid. Cook them, stirring, for 5 minutes together with the spices, or until the outside part of the meat turns light brown in color.
Stir in the tomato sauce for 1–2 minutes.
Add water and bring it to a boil. Cover the pot and simmer for an hour or until the meat gets tender.
Note: If the sauce appears to be drying out, add more water as needed until the meat gets tender.Add the carrots and potatoes, and then cook for 5 minutes, covered. Add bell peppers and olives if using, then simmer for 5 minutes.
Add the liver spread, stir, and cook for another 5 minutes. Season with salt and pepper to taste.
Keep cooking for a few minutes, or until you reach the desired amount of sauce. Taste it and adjust as necessary.
Serve warm with a pair of steaming rice. Enjoy!
