Dinengdeng mainly use bagoong isda; in Visayas, we call it ginamos, and it gives a lovely flavor to the dish.

Preparation:

  1. Clean the bangus (milkfish), slice, and set aside.

  2. Peel, slice, chop, and wedge the spices for the recipe.

  3. Cut the sitaw (string beans) into 2 to 3 inches, core, and slice the ampalaya (better melon).

Cooking:

  1. Heat oil in a pot over medium heat. Gently add the sliced fish and fry until cooked. Turn the heat off, take out the fish, and set it aside.

    Note: You can grill the fish if desired.
  2. In a large cooking pot, pour in 3 cups of water. Turn the heat up and bring the liquid to a boil.

  3. Once the liquid starts boiling, add the spices: onion, ginger, and tomato.
    Cover the pot and cook for 3 to 5 minutes.

  4. Add the kalabasa (squash) slices and cook for 5 minutes.

    Note: Add the sitaw (squash) first because it takes time to get soft.
  5. 5 minutes later, add the bagoong isda. Stir.

  6. Add the string beans (sitaw), ampalaya, and okra. Cover again and cook for 5 minutes.

  7. Add the squash flower if using, and add the saloyut or malunggay leaves. Cook for 3 to 5 minutes.

  8. Add the fried or grilled bangus (milkfish). Submerge in the soup and allow it to cook for few minutes to give flavor to the dish.

  9. Taste it and adjust as necessary. Transfer to a serving dish.

    Note: If desired, add seasoning granules to the recipe for taste, but it is totally optional.
  10. Serve warm, the dish goes well with a cup of warm rice.
