Preparation:
Prepare the pork and slice it into cube pieces.
In a bowl, combine the soy sauce, lemon or calamansi juice and ground black pepper, then add the pork pieces and marinate them for an hour. (Chilled them – optional)
Prepare all the spices and vegetables needed for the recipe.
Cooking:
On a pan or skillet, heat 2 to 3 tablespoons of cooking oil. Add the garlic and saute for a few seconds, then add the onion and saute until soft.
Add the pork and sauté together. Allow them to cook for 5 minutes or until the meat changes color, then add the marinade sauce. Stir.
Add the tomato sauce and water, then add the dried bay leaves and bring to a boil.
Lower the heat and simmer for 30 minutes to an hour, depending on the toughness of the pork.
Note: Add more water as needed until the meat turns tender.Add the liver and cook for 3 minutes, covered. Then add the hot dog, carrots, and potatoes and cook for another 3 minutes.
Season with salt, sugar, and pepper. Stir and simmer over low heat for about 10 minutes until the liquid reduces and turns slightly thick.
Taste it, then adjust as necessary.
Transfer to a serving dish and serve warm.
