Instructions
Put 2 cups of glutinous rice flour in a large mixing bowl and make a well in the center. Pour in the water gradually and keep mixing until dough is formed.
Note: Keep in mind that the consistency should be neither too dry nor too wet. Adjust the water as needed.Scoop 1/2 tablespoon of dough and roll it in between your palms to form a small ball shape. Repeat the process until all the dough is finished.
In a pot, combine water, coconut milk, and sugar. Turn on the heat and bring the liquid to a boil over medium heat. Stir.
Add the camote cubes (sweet potato). Cook, stirring time by time, for 3 minutes. Add the saba (plantain banana) and cook for another 3 minutes.
Add the coconut cream, stir, and re-boil the liquid. Add the glutinous rice balls and allow them to cook for 5 minutes. Regular stirring is required.
Once you notice that the rice balls are floating on a surface, add the cooked sago (tapioca pearls) and the langka (jackfruit). Add vanilla extract for extra flavor if desired.
Note: I used store-bought mixed-color cooked sago (tapioca pearls). You can use plain cooked sago (tapioca pearls) if desired.Cook for another 3 to 5 minutes, or until the jackfruit and tapioca pearls are soft and the desired amount of sauce is reached.
Turn off the heat and immediately transfer it to a large container.
Note: Keep in mind that even after you remove it from the heat, it will continue to thicken.Serve it warm or cold. Enjoy!
