Marinating process

  1. Put the pork chop slices in a bowl and add soy sauce, calamansi juice, oyster sauce, ground black pepper, and garlic powder.

  2. Mix until well combined, and marinate the meat for at least 30 minutes or longer.

  3. To cook, separate the meat from the marinade mixture and set aside the liquid for later use.

Cooking

  1. In a wide pan, heat a tablespoon of cooking oil.

  2. Sear the marinated pork chop on both sides for 4 to 5 minutes, or until golden brown and a crust forms on the seared meat. Flip over to cook on both sides. Once cook, remove it from the pan.

  3. In the same pan, add 2 tablespoons of cooking oil. Saute the garlic and onion until fragrant.

  4. Add tomato paste and tomato ketchup, then saute for a minute.

  5. Add the marinate mixture to the pan, then add ground black pepper to taste and stir for a minute.

  6. Put back the seared pork in the pan, then add water, star anise, and sugar.

  7. Cover and simmer for 45 minutes or longer until the meat gets tender.

    Note: Add more water as needed.
  8. Once the meat is tender enough, flip over the meat and toss with the sauce.

  9. Keep cooking for a few minutes until your desired sauce is reached. Don’t forget to taste and adjust as necessary.

  10. Turn off the heat and transfer the dish to a serving plate. Serve and enjoy!
