In a mixing bowl, put the sliced ampalaya, then add salt. Mix thoroughly, and then set aside for 10-15 minutes.
Drain and then rinse the ampalaya well. Set aside.
Heat the cooking oil in a pan over medium heat. Sauté the garlic, onion, and tomato.
Place the ampalaya in the pan and toss to mix with the other ingredients.
Add a small amount of water and cook for a few minutes until almost all of the liquid has evaporated but the ampalaya is still crisp.
Pour over the beaten eggs and season with salt and ground black pepper, then let the eggs cook partially.
Toss egg and ampalaya mix together.
