Ampalaya (bitter gourd or better melon) plus egg is a perfect combination recipe that will turn into a very nutritional and budget-friendly dish for everyone.

Prepare the ampalaya (bitter gourd). Wash it, then cut it in half vertically. Then scrape off the seeds and pith in the middle and slice it thinly. Set aside.
Soaking the sliced ampalaya into water with salt is optional. To keep the nutritional benefits intact, we will not do that practice in this recipe.
Prepare all of the vegetables required for sauteing, including the garlic, onion, and tomato.
Heat the cooking oil in a pan over medium heat. Saute the sliced garlic, onion, and tomato.
Place the sliced ampalaya in the pan and toss to mix with the other ingredients.
Note: Add a small amount of water if necessary.Season with salt and ground black pepper to taste. Continue cooking for 2 to 3 minutes over low heat. Until almost all of the liquid has evaporated but the ampalaya is still crisp.
While cooking the ampalaya over low heat, crack eggs into a mixing bowl and beat it.
Note: Don't overcook the ampalaya.In a pan with the ampalaya, make a free space. Pour in the beaten egg. Wait until a bit thickens, then gently mash to scramble it.
Mix to combine the ampalaya and the scrambled eggs. Toss them together and it's all done.
Transfer to a serving bowl. It’s best to serve it while it's warm, with a cup of steaming rice. Happy cooking. Share and enjoy eating.
