Instructions

Marinating:

  1. Prepare the sliced pork belly, wash and pat dry using paper towel. Set it aside.

  2. Get a large mixing bowl with a lid or a large container with a lid. Combine all of the ingredients, including soy sauce, oyster sauce, calamansi or lemon juice, ketchup, brown sugar, garlic, salt, and ground black pepper. Mix until the salt and sugar have completely dissolved.

  3. Put the sliced pork belly into the marinade mixture.  Mix and soak it until the sauce has completely covered the pork. Cover the lid and let it marinate for at least 3 hours, or overnight is better, but it is highly recommended to put it in the fridge.

Basting sauce:

  1. Combine soy sauce, ketchup, oyster sauce, vegetable oil, brown sugar, and pepper in a small bowl. Mix until the sugar is completely dissolved.

Grilling:

  1. Grill the marinated pork belly in a pan grill or grill it using the traditional method using charcoal.

  2. Place the pork belly on a hot grill in a single layer. Cook for 3 minutes on each side.

  3. Brush each side with basting sauce while grilling.

  4. Continue grilling until the meat is fully cooked.

    Note: Don’t overcook the pork belly; keep it crisp on the outside and juicy on the inside.
  5. Serve it hot with a dipping sauce of your choice! Toyomansi or spicy vinegar.
