Instructions

Preparation:

  1. Clean and cut chicken wings at the mid-joint; wash and drain water.

  2. Add salt, garlic powder, and ground black pepper to a mixing bowl. Allow the wings to sit for 30 minutes after mixing and massaging them.

  3. In another mixing bowl, combine the all-purpose flour, rice flour or corn starch, garlic powder, ground black pepper, and paprika powder. Stir.

  4. Dredge the chicken wings one at a time into the flour mixture, then arrange them in the tray.

  5. Coated chicken wings are ready to fry.

Cooking:

  1. In a skillet or wok, heat vegetable oil over medium heat. When the oil is hot enough, add the coated wings one at a time.

  2. Fry them on both sides over medium heat until the color turns light brown; remove from the pan and set aside to rest. After resting the wings for several minutes, prepare for a second fry.

    Note: Adjust the heat to high at this time to achieve a crispy wing.
  3. Fry the wings for the second time; when the color changes to golden brown, take them out of the heat and set them aside for a while.

  4. Make the sauce in a sauce pan. Melt butter over medium-low heat. Add minced garlic and saute until it turns light brown and fragrant.

  5. Add the soy sauce and water, stir, and bring to a gentle boil.

  6. Add the honey, stir, and simmer until the sauce is slightly thickened and caramelized.

  7. Toss in the fried wings until they are evenly covered with the sauce.
