Preparation:
In a mixing bowl, combine all the dry ingredients, starting with the cassava flour, all-purpose flour, and brown sugar, and then mix all the ingredients.
While mixing, add water gradually and continue to mix until all ingredients are completely distributed.
In a small bowl, mix annatto powder with 1 tbsp. hot water. Then add it to the mixture, add Vanilla Extract and add lye water, then continue mixing until well blended.
Strain the mixture. Place the mixture into individual molder. Use a medium-sized puto molder.
Arrange in a steamer tray and steam.
Cooking:
Pre-heat the steamer, then place the steamer tray loaded with kutsinta mix.
Steam them for 20 to 25 minutes, covered with a cloth-wrapped lid.
Check for doneness with a toothpick; if it comes out clean and not sticky, it's cooked.
Remove the kutsinta from the tray and set it aside to cool completely.
Once it has cooled, remove it from the molders and sprinkle with fresh grated coconut or cheese.
