Filipino lechon kawali recipe is a pork belly that is cooked till soft and then deep fried. This a traditional Filipino delicacy. Crispy deep-fried pork is the simplest way to describe it.   1. Combine pork belly, garlic, salt, peppercorns, bay leaves, and enough water in a pot. Set the fire to medium heat and bring it to a boil. Skim the scum that floats on top. Set the fire to low heat and continue cooking for 1 hour and 30 minutes or until the pork meat is tender. Make sure that the pork meat is not falling apart.

  2. Drain the pork meat and wipe it dry. Place them on a rack and refrigerate them overnight to completely cool and dry.

  3. Heat enough cooking oil for about 350 F to 375 F in a deep, heavy-bottomed pot. Fry the pork meat until it turns golden brown, crisp and puffed.

  4. While the pork meat is frying, regularly sprinkle about 1 tablespoon of cold water onto the pork meat and hot oil every 5 minutes or so.

  5. Remove the pork meat from the pot and drain it on a wire rack. Use a table napkin to drain excess oil. Let it rest for about 5 minutes and then cut into serving pieces.

  6. Serve with lechon sauce or any dip of your choice. Enjoy eating.
