Let’s start with the filling:
In a pan, heat 3 tbsp. of cooking oil. Add the onion and saute until soft, then add the garlic and saute until fragrant.
Add the ground pork and saute, then add the Knorr cube. Saute the pork until it is light brown.
Pour in water, ½ to 1 cup. Stir and simmer until the water has reduced to ¼ .
Add the ubod, carrot, and singkamas. Mix and cook for 3 to 5 minutes.
Regularly mix until the pork and vegetables are combined and cooked.
Note: In the middle of mixing season with salt and pepper powder to taste. When everything is combined, add the shrimp to the pan. Mix and continue cooking until the shrimp turn orange. Once cooked, remove from heat and set aside.
Lumpia sauce:
In a sauce pan, pour in water. Add the brown sugar and stir until completely dissolved.
Add the garlic; cook and stir.
Add soy sauce and oyster sauce then stir.
Add the slurry and continuously stir while cooking until the sauce slightly thickens. Set aside
Fresh lumpia wrapper:
In a mixing bowl, crack 3 eggs and beat them.
Add cooking oil while stirring it. Then add the water, stir, and add the alphine milk. Stir well.
Add the all-purpose flour and cornstarch gradually, stirring constantly, until the batter achieves the desired consistency.
When the consistency is reached, use a strainer to filter the mixture to get a smooth batter.
Next, heat up a non-stick pan over low to medium heat. Spray or grease it with oil. Then Pour enough the batter mixture into the pan to form a wrapper.
Cook over low to medium heat until the wrapper is fully cooked through. Remove it from the heat and set it aside to cool down.
Repeat the process until all the mixtures are finished.
Fresh lumpia assembly:
Place the lumpia wrapper on a flat surface. On top of it, place a piece of lettuce leaf.
Add a scoop of filling over the leaf that fits the wrapper and gently wrap it.
Place and arrange the wrapped lumpia on a serving plate.
Then pour our homemade sauce over it.
Lastly, add crushed peanuts for toppings.
