In a pan, heat cooking oil over low to medium heat. Crack the 3 eggs and fry until cooked. When it’s cooked, remove it from the pan and set aside.
In the same pan, add chopped garlic and saute until aromatic. Add the diced onion and saute until soft and translucent.
Add the diced tomato and saute for a few seconds. Add the chopped red chili and saute.
Add the mung bean sprouts, or togue, salt, and oyster sauce. Mix until everything is well combined.
Add water and bring it to a gentle boil. Mix and cook until the mung bean sprout or togue is soft.
Place the fried eggs on top and season them with ground black pepper to taste. Add the chopped green onion. Flip the fried eggs and submerge them in the sauce while cooking them over low heat. Adjust the taste according to your preference.
Transfer the dish to a serving bowl.
