Yummy and soft Pork Adobo with Coke Recipe

Another variation of the delectable Filipino adobo recipe. This pork adobo with coke recipe is very soft and yummy. The dish is made of pork belly, soaked in marinade sauce, and simmered with Coca-Cola drinks and water for the right period of time until the meat gets soft.

The coke drink ingredients give the meal a delicious flavor and a hint of sweetness. This version of adobo tastes a little sweeter than the traditional adobo recipe. The taste is quite similar to that of humba bisaya, a delicious authentic bisaya dish.

Pork Adobo is one of the most beloved dishes in the Philippines, known for its rich flavor and tender meat. The addition of Coca-Cola not only enhances the taste but also helps to tenderize the pork further.

To really appreciate what makes this dish special, let’s delve into its origins and variations. Traditionally, adobo is a method of marinating meat in vinegar, soy sauce, and spices, but this particular version incorporates the sweetness and acidity of Coke, creating a delightful balance.

The result is a unique blend that tickles the taste buds while remaining true to the traditional roots of Filipino cuisine. For those who enjoy experimenting with flavors, the use of Coke opens up new possibilities; for instance, you can try using other soda flavors or even different cuts of pork, such as shoulder or ribs, which can further enhance the dish’s texture and taste.

Before you start cooking, gather all the necessary ingredients. You will need pork belly, soy sauce, vinegar, garlic, bay leaves, peppercorns, and of course, Coca-Cola.

A good tip is to marinate the pork for several hours or overnight, allowing it to soak up the flavors. This marination step is crucial for achieving that deep, rich taste that adobo is famous for.

Once marinated, the cooking process begins, where you will sauté the garlic until fragrant, add the marinated pork, and then pour in the Coca-Cola and water. The key here is to let it simmer gently, stirring occasionally, until the pork is fork-tender and the sauce thickens. This can take anywhere from 45 minutes to an hour depending on the size of your pork pieces.

Prep and cooking:

  1. Prepare the pork belly, if bought uncut then cut it into adobo serving parts. Next, prepare garlic and onions.

  2. Heat the pan over a medium flame. Sear the pork meat until it turns a light brown and its fat starts rendering. I do this for roughly 15 minutes, until the pork renders enough oil for sauteing.

  3. Make a small space for sauteing. Push the pork onto one side of the pan.

  4. Saute the garlic and the onion for 30 seconds or until aromatic, then stir them all together for a minute.

  5. Add the soy sauce and stir for a minute to evenly distribute it into the meat.

  6. Add dried bay leaves and whole peppercorns. Stir quickly.

  7. Add the vinegar; let it come to a boil for 2 minutes before stirring.

  8. Add the Coke drinks and bring to a boil. Cover the pan.

  9. Adjust the heat to medium-low and simmer for 20 minutes.

  10. Check the meat and stir. Add water to tenderize the meat.

  11. Cover again and simmer for another 20 minutes, or until the meat gets tender enough.

    Note: Add water if necessary.
  12. Once the meat is tender, season with salt to balance the sweetness of the coke drinks in the dish.

  13. Season with all-purpose seasoning if desired; it’s totally optional. Keep cooking until the desired sauce is reached.

  14. Taste the dish, and then adjust accordingly if necessary.

  15. Turn off the heat and transfer the dish to a serving plate. Enjoy the meal.
