Preparation:

  1. Gather all the ingredients needed, peel and chop the spices like ginger, onion, and garlic.

  2. Clean the chicken liver, cut off extra fatty parts, wash it and drain it thoroughly.

Cooking:

  1. In a pan or wok, heat vegetable oil over a medium-high flame. Add the chopped onion and ginger, saute for a few seconds, and then add the chopped garlic and the freshly cracked pepper corn. Saute until the garlic is fragrant.

  2. Add the chicken liver, arrange them and cover. Cook for about 5 minutes without stirring it. Then flip and cook the other side until it turns a bit fried on the edges. Then stir.

  3. Add the dried bay leaves, oyster sauce and soy sauce then stir.

  4. Pour in the vinegar, cover and cook for 5 minutes.

    Note: Do not stir to maintain the acid taste of the vinegar; cook it for 5 minutes.
  5. Five minutes later, open it and stir. Season with salt, black pepper powder, and sugar to taste. Stir.
