Preparation
Wash the eggplant and slice them into pieces, then soak them in a bowl of water to prevent them from darkening.
Peel off the skin of the onion and garlic, then chop them into pieces.
Cooking
In a wok over heat 3 tablespoon of oil over medium heat. Add the eggplant and cook until lightly browned. Take it out of the wok and set it aside.
In the same wok, if the oil is not enough, add a bit of cooking oil to saute. Add the chopped garlic and saute. Then add the chopped onion and saute together until soft and aromatic.
Add the ground pork. Stir fry until the pork color changes to light brown. Let it cook for 5 minutes, or until the fat renders.
Add soy sauce and oyster sauce. Then stir and cook for another 10 minutes, or until the pork is tender.
Note: Add a small amount of water as necessary.Add back the fried eggplant to the wok. Add cooking wine (optional).
Season with salt and pepper to taste. Mix it and give it a taste. Adjust it as necessary.
Add chopped green onions or scallions. Toss it and serve it warm.
