Heat enough oil in a pan over medium-low heat. Add the garlic and onion and saute until translucent and aromatic.
Add ground pork. Then season with salt and pepper to taste and cook for 5 minutes, stirring occasionally, until the color changes to medium brown.
Take it out of the pan and place it in a large basin. Allow it to cool. When it is cool, crack 1 egg, beat it, and pour it into the cooked ground pork. Mix well. Set aside
Prepare the long green chili peppers by slicing them lengthwise from the top to the bottom on one side. Then remove the seeds by using a spoon or knife and gently scraping them. Set it aside.
Slice the cheddar cheese into thin, long pieces. Stuff it individually into each pepper. Then scoop the mixture and stuff it into the chili peppers. Make sure that there is enough space for the meat. Wrap the stuffed peppers in a lumpia wrapper. Repeat the process until all are finished.
Then it's time to fry.
Heat enough cooking oil in a pan. When it heats up, fry each piece of dynamite lumpia over medium heat for 2 minutes per side, or until the lumpia wrapper turns golden brown.
Note: Adjust the heat to medium low and fry it for a little longer if necessary.Remove from pan and place on a wire rack or paper towel to cool. Serve it a bit warm and crispy with a dipping sauce of your choice. Or a toyomansi with siling labuyo.
