Pork Menudo is a saucy dish with a great flavor. This is a meal that goes well with warm rice and may be found at any Filipino gathering. You'll notice that this pork stew has a lot in common with pork afritada and mechado. The liver is the component that differentiates menudo apart from the other two dishes. If you serve this pork menudo to your family and friends, surely they will be satisfied.

In a pan, heat cooking oil over low-medium heat. Sauté the chopped garlic until it turns golden brown and then put in the cubes of onion and stir well.
Add the pork and season with fish sauce. Cook it until it turns golden brown. Stir it occasionally.
Put in the cubes of tomato, thinly cut hotdogs and cubes of pork liver. When the pork liver changes color, add the cubes of carrot and potato and mix well.
Add water, soy sauce and tomato sauce, then stir well. Cover and cook it for 15-20 minutes or until the meat is tender over low heat.
Remove the cover, then add cooked green peas, cubes of bell pepper and dried bay leaves. Season with salt and pepper powder. Adjust the taste according to your desired taste.
Transfer to a serving bowl and serve with a bowl of warm rice.
