Preparation:

  1. Clean the shrimp, then remove the antennae. Keep the head and shell intact.

  2. Peel and mince the spices needed for the recipe.

Cooking:

  1. In a pan, heat cooking oil over a medium-low flame. Saute the ginger, onion, and garlic.

  2. Pour in coconut milk and add fish sauce and ground black pepper.

  3. Allow the liquid to boil for 10 minutes, or until it has reduced by half.

  4. Add the hipon (shrimp) and cook for 5 minutes.

  5. Add the slices of long green chili, stir, and cook for another 5 minutes.

    Note: Red chili's are optional; add them if you want an extra spicy taste.
  6. Turn-off heat and then transfer to a serving plate; serve hot.
