Preparation:

  1. Clean the chicken thighs and put them in a mixing bowl.

  2. Add calamansi juice, salt, fish sauce, and ground black pepper. Mix well. Marinate it for at least 30 minutes.

  3. Meanwhile, prepare the breading mixture by combining all-purpose flour, cornstarch, ground black pepper, paprika powder, garlic powder, and salt in a mixing bowl. Set aside.

  4. Crack the salted egg and collect only the egg yolks, then put them in a small bowl and mash well.

  5. Peel and mince the garlic, then chop the red chilies.

  6. 30 minutes later, get the chicken and dredge each chicken thighs in the breading mixture. Shake a bit until the extra flour is removed. Then it's ready to fry.

Cooking:

  1. Heat enough cooking oil in a large pan over medium-high heat.

  2. Gently add the chicken and fry until light brown for 10 minutes.

  3. Once the chicken turns light brown, remove it from the fryer and let it rest for 10 minutes.

    Note: If cooking a large amount, please don’t overcrowd the pan to maintain the oil temperature.
  4. Fry them in batches until all are finished, and turn off the heat.

  5. After resting the fried chicken thighs, re-heat the oil, set the heat to a high temperature, and double fry the chicken thighs until golden brown and crispy. Set it aside.

  6. In a separate pan, melt 3 tablespoons of butter over medium-low heat and saute the garlic until aromatic.

  7. Add the chopped red chilies and the mashed, salted egg yolks. Stir until thoroughly combined.

  8. Add a small amount of water and stir until the sauce liquefies. Add sugar to balance the saltiness, and add freshly ground black pepper to taste. Stir.

  9. Place the fried chicken thighs in the pan and toss until well coated with the sauce.

  10. Turn off the heat and transfer to a serving dish. Serve warm.

  1. Made it tonight for dinner – was delish! the fish sauce really added to the saltiness of the marination (although it was a bit over powering so I may just add more salt and less fish sauce next time) and I subbed lemon juice for calamansi since I had none of that at hand.
