Easy way on how to make Salted Egg Shrimp recipe.
This salted egg shrimp recipe is a beloved dish in Malaysian Chinese cuisine, known for its rich, savory, and indulgent flavors. Whenever I dine at a Chinese restaurant, this is one of my go-to dishes because of its irresistible taste—each bite is a perfect balance of creamy, salty, and slightly sweet notes. Inspired by my love for this dish, I decided to recreate it at home, and I’m thrilled to share that my version comes remarkably close to the restaurant-style classic. The result is a dish that’s crispy on the outside, tender and juicy on the inside, and bursting with flavor in every bite.
The secret to this recipe lies in the salted egg yolk sauce, which is made by mashing cooked salted egg yolks into a smooth, creamy mixture. This sauce is then combined with aromatic ingredients like curry leaves, chili, and butter, creating a rich and fragrant coating that clings to the shrimp. The shrimp themselves are lightly coated in cornstarch and fried until golden and crispy, ensuring a satisfying crunch that contrasts beautifully with the creamy sauce.
What makes this dish truly special is its combination of textures and flavors. The crispiness of the shrimp, the creaminess of the salted egg yolk sauce, and the subtle heat from the chili create a harmonious blend that’s both luxurious and comforting. It’s a dish that’s perfect for special occasions or whenever you’re craving something indulgent and unique.

Ingredients
Instructions
Preparation:
Clean the shrimp, remove the shells and head, and devein. Wash and pat them dry, and season with salt and ground black pepper to taste. Let it sit for 10 minutes before deep-frying.
To keep the shrimp dry before deep-frying them, mix two tablespoons of cornstarch with them.
Cooking:
Heat the cooking oil in a wok or a large skillet over medium heat. Cooking oil should be enough to submerge the shrimp when frying.
Gently put the shrimp into the hot oil to deep-fry until cooked and the color changes to golden brown.
Use a slotted spoon to remove them, and set them aside for a few minutes in a colander or paper towel to remove the excess oil.
Note: For crisp shrimp, double-fry them if desired. In a sauce pan, melt 2 tablespoons of butter over low heat. Add the garlic and saute until aromatic.
Over low heat, stir-fry the mashed salted egg yolks with the garlic until the oil starts to bubble up.
Season with salt and ground black pepper, and stir. Add sugar to balance the taste. Taste it and adjust as necessary.
Add the deep-fried shrimp cooked earlier, stir, and add a splash of cooking wine to the shrimp.
Add thinly chopped spring onion and toss well until combined.
Add chopped red chili for a spicy taste if desired.
Turn off the heat and transfer the dish to the serving plate. Serve warm and enjoy.
