How to make Salted Egg Shrimp Recipe?

Preparation:
Clean the shrimp, remove the shells and head, and devein. Wash and pat them dry, and season with salt and ground black pepper to taste. Let it sit for 10 minutes before deep-frying.
To keep the shrimp dry before deep-frying them, mix two tablespoons of cornstarch with them.
Cooking:
Heat the cooking oil in a wok or a large skillet over medium heat. Cooking oil should be enough to submerge the shrimp when frying.
Gently put the shrimp into the hot oil to deep-fry until cooked and the color changes to golden brown.
Use a slotted spoon to remove them, and set them aside for a few minutes in a colander or paper towel to remove the excess oil.
Note: For crisp shrimp, double-fry them if desired.In a sauce pan, melt 2 tablespoons of butter over low heat. Add the garlic and saute until aromatic.
Over low heat, stir-fry the mashed salted egg yolks with the garlic until the oil starts to bubble up.
Season with salt and ground black pepper, and stir. Add sugar to balance the taste. Taste it and adjust as necessary.
Add the deep-fried shrimp cooked earlier, stir, and add a splash of cooking wine to the shrimp.
Add thinly chopped spring onion and toss well until combined.
Add chopped red chili for a spicy taste if desired.
Turn off the heat and transfer the dish to the serving plate. Serve warm and enjoy.
