Sinaing na tulingan, a version of paksiw na isda (braised tuna), is a beloved Filipino recipe that originated from the coastal towns of Batangas. It is best cooked in a clay pot wrapped in banana leaves to enhance the flavour, but a wok or deep pot will work too. Cook small to medium-sized tulingan (bullet tuna) with kamias (bilimbi) to give it an extra-ordinary taste.   1. Prepare the banana leaf by cutting it about 2 inches thick and cleaning it with a moist towel to eliminate any dirt. Set aside.

  2. Remove the innards, gills, and tail from the fish. Then wash the fish in running water to remove all the blood. Cut a slit in the center on both sides of the fish.

  3. In a bowl, put water and soak the fish for 10 minutes, then clean up the blood. Rinse and drain well.

  4. Rub rock salt gently over the fish. Wrap a portion of the body and the head with banana leaves.

  5. In a pot or clay pot, at the bottom layer, with banana leaves Arrange half of the kamias at the bottom, after the banana leaves.

  6. Place and arrange each fish over the banana leaves and kamias.

  7. Add the remaining kamias on top of the fish, then season with 1 tbsp salt and 5 tbsp coconut vinegar.

  8. Pour enough water to cover the fish. Cover the fish with pre-cut banana leaves.

  9. Cover it with the pot lid. Bring to a boil on the stove.

  10. Lower the heat and simmer the fish for 5 hours, or until the flesh and bones are very tender.

  11. Add water as needed. Note: Adding additional seasonings to balance the taste is optional (seasoning granules to taste).
