Preparation:
Clean the shrimp, devein, remove the shell and head, and keep the tail intact.
Peel and chop the spices.
Cooking:
Boil 2 cups of water, and then add the noodles. Cook the noodles for 3 minutes or until soft but not overcooked. Turn off the heat and separate the noodles from the liquid; set it aside for a while.
Heat 2 tablespoons of cooking oil in a clean pan. Saute the garlic until aromatic, then add the onion and saute until soft.
Add the shrimp and Sauté together with the spices until it changes to a light orange color. Then add a small amount of water, or as needed. Add the special seasoning of pancit canton. Stir and bring the liquid to a soft boil.
Add the boiled pancit canton noodles and the thinly sliced cabbage and mix. Season with salt and freshly ground black pepper, to taste. Add the chopped green onion. Mix it, taste it, and adjust as necessary.
Turn off the stove and transfer it to a serving plate. Serve warm, and enjoy!
