Description
Tinolang Manok or Chicken Tinola, is a chicken dish made by sautéing garlic, onions, and ginger, then adding mixed cut chicken pieces and turning them light brown. Add water and chicken broth cubes and simmer. Malunggay (moringa) leaves or Dahon ng Sili are added, as well as sliced Sayote (Chayote). To impart a salty or tasty flavor, long green chili, salt, or fish sauce are also added. Tinolang Manok recipe is best to eat with warm rice.

Preheat cooking oil in a pot. Sauté minced garlic and sliced onion and sliced ginger.
Put chicken meat over sautéed spices. Season with salt, mix and cook for a few minutes over low heat.
Add water and lemon grass. Cover and simmer for 10-15 minutes over low heat.
Remove extra oil and scum, then add chicken broth cubes, roughly cut sayote and pepper powder. Cover and simmer for 10 minutes or until cooked over low heat.
Add fish sauce, green long chili and malunggay (moringa) leaves. Cover again and continue cooking over medium heat until vegetables are cooked.
Transfer to a serving bowl. Serve while still warm. Enjoy eating!
