I regularly eat at Chinese restaurant, and saw this recipe eggplant stir-fry dish. I decided to order and eat it and it was so delightful to eat with steamed rice.
Since then I decided to cook it at home. It's a simple vegetarian recipe that only requires a few widely available ingredients. The ideal cooking method is just too easy. The eggplant was simply sliced into pieces, fried, and then seasoned with spices. Simply add long green chili, chili flakes or chili powder to your ingredients list if you want a savory flavor.
