Preparation:

  1. Peel and cube the carrots, then peel and chop the needed spices, like garlic and onions.

  2. Clean the chicken liver, cut off extra fatty parts, wash it and drain it thoroughly.

Cooking:

  1. Heat the vegetable oil in a skillet or wok over medium-high heat. Pan fry the carrots until they change color and the edges turn light brown. Remove it from the pan and set it aside.

  2. In the same skillet or wok, saute the chopped onion until soft, then add the chopped garlic and saute until fragrant.

  3. Add the chicken liver, arrange them and cover. Cook for about 5 minutes without stirring it. Then flip and cook the other side until it turns a bit fried on the edges.

  4. Add the freshly cracked peppercorn, dried bay leaves, oyster sauce, and soy sauce, then stir. Pour in the vinegar, cover and cook for 5 minutes.

    Note: Cook for 5 minutes without stirring to preserve the acidity of the vinegar.
  5. After five minutes, open it and stir it. Add the pan-fried carrots, season with salt and black pepper to taste. Add sugar if desired. Stir.

    Note: Sugar is optional. Sugar helps blend and balance the saltiness of the adobo.
  6. Continue cooking for a few minutes until the sauce becomes slightly thick. Add the long green chili and adjust the taste as necessary.
