This recipe for Bopis is so delicious; it is a Filipino spicy dish made from pork (lungs, spleen, and heart), diced into small pieces or minced. Cook with certain spices until the meat gets soft and has a little bit of sauce in it. The dish is perfect for an appetizer or can be served as a main dish; many serve it for polutan, and it goes well with cold alcoholic beverages.

Ingredients for boiling:

Instructions

  1. Clean and wash the bopis set (lungs, spleen, and heart), then put it in a large pot.

    Note: You can use pork lungs only if desired.
  2. Pour in 6 to 8 cups of water, then add the boiling ingredients like garlic, onion, lemongrass, peppercorns, and bay leaves and cover the pot.

  3. Turn on the heat and cook at a boil for an hour, or until the meat gets soft. Remove it from the pot and let it cool down. Dice them into small pieces and set them aside.

  4. In a large pan or pot, heat cooking oil for sauteing. Saute garlic, onion, and ginger until fragrant.

  5. Add the diced meat and cook, stirring, for 3 minutes. Add the vinegar and allow it to cook for a few minutes without stirring. Then add 2 cups of water and let it boil.

  6. Add dried bay leaves, and then add a pork broth bouillon cube if desired. Stir and cover the pot. Set the heat to medium and continue to cook until the liquid evaporates and reduces by half.

  7. Add the fish sauce and stir. Add the red bell pepper, carrot, red chili, and annatto powder. Allow to cook for 2 to 3 minutes.

    Note: If the annatto powder is not available, substitute it with turmeric powder if desired. Start with 1 teaspoon.
  8. Season with salt, ground black pepper, and sugar to taste. Stir, taste it, and adjust accordingly.

  9. Turn off the heat and transfer to a serving dish.

  10. Serve warm; it goes well with warm rice. Enjoy!
