Ingredients

Instructions

Preparation:

  1. Cut the pork meat into serving pieces, preferably into 2-inch cubes.

  2. Put the pork meat in a large bowl and add soy sauce and sprite. Mix them together and let the pork marinate in the fridge overnight or for at least 4 hours before cooking.

  3. Separate the pork from the marinade sauce.

  4. Peel the garlic and crush it, then peel and mince the onion. Proceed to cooking.

Cooking:

  1. Heat the oil in a large skillet over medium heat. Add the onion and saute until softened, then add the garlic and saute until light brown and fragrant.

  2. Add the pork and cook until it is lightly browned and its fats start rendering. Stirring occasionally is required while cooking for 3 minutes.

  3. Pour in the marinade mixture, stir, and bring to a boil.

  4. Pour in the vinegar and let the liquid re-boil. Keep cooking for 3 minutes without stirring.

  5. Add water and re-boil the liquid. Adjust the heat to medium-low. Cover and simmer for 30 minutes or until the pork gets tender.

Note: Add water if needed to get the meat tender.
  6. Season with salt and pepper to taste. Taste the sauce and adjust as necessary.

  7. Simmer again until the desired amount of sauce is reached.

Note: Filipino adobo dishes are best served with a thick and sticky sauce.
  8. Transfer to a serving dish. Serve with a pair of steaming rice. Share and enjoy your meal.

    Happy cooking!
