In this recipe, we use beef and potatoes, which is a great combination of protein and vegetables cooked together in a single dish. The adobo recipe in Filipino cuisine is highly flavorful and goes well with a plate of steam rice.

Preparation:

  1. Cut the beef Brisket into 2 inch cubes. Set aside.

  2. Peel and cubes the potato then mince and chop the spices.

Cooking:

  1. Heat 3 tablespoon of cooking oil in a wok over medium high heat. Fry the potato cubes for 5 minutes or until light brown starts appearing on edges. Remove from heat and set aside.

  2. On the same pan with the remaining oil, saute the onion until soft, then add the garlic and saute until aromatic.

  3. Add the beef and sauté together with the spices for 1 minute. Season with ½ teaspoon salt and ground black pepper. Stir fry until light brown in color.

  4. Stir in the soy sauce, oyster sauce and sugar, allow to cook for 3 minutes. Then add the vinegar, let it cook for 3 minutes without stirring.

  5. Add the peppercorn and dried bay leaves. Pour in water and bring to boil then add 1 beef broth cube.

  6. Cover the wok, lower the heat to medium low and simmer the beef for 45 minutes or until the meat gets tender and the sauce meets your desired consistency.

    Note: Add water as needed to get the beef tender. Or just add a soda drinks to give extra taste to your adobo recipe.
  7. Add the pan fried potato, mix until well coated with sauce. Taste it and adjust, add salt and ground pepper to taste as necessary.

  8. Cover lid again and allow to cook for another 2 to 3 minutes.

  9. Transfer to a serving dish. Serve it warm with steaming rice.
