The process of making champorado is simple and straightforward. The glutinous rice is cooked until soft and creamy, then combined with melted tablea to create a thick, chocolatey porridge. The addition of sugar or muscovado sugar enhances the natural sweetness of the chocolate, while the condensed milk adds a creamy, luxurious finish. For an even richer flavor, you can use sweetened tablea, which simplifies the process and adds an extra layer of sweetness.

Champorado is often enjoyed warm, especially during rainy days, as its comforting warmth and rich flavor make it the perfect dish to cozy up with. It’s traditionally paired with tuyo (dried salted fish) for a sweet-and-salty combination, but it’s equally delicious on its own or with a side of fresh milk.

Instructions

  1. In a deep cooking pot, pour in water. Turn on the heat and bring the liquid to a boil.

  2. Meanwhile, wash the rice and drain the water, then add the rice to the pot. Stir until it is well distributed, and let the water re-boil.

Note: If glutinous rice is not available, you can substitute it with white long grain rice.
  3. Reduce the heat to medium-low, and then stir almost constantly to avoid sticking until the rice begins to expand.

  4. Once the rice is about to cook and begin to soften, add the tablea and keep cooking. Regular stirring is necessary until the chocolate tablet "tablea" has melted.

  5. Cook the rice a little longer until it becomes translucent and soft and the liquid is reduced to the right consistency. Add the sugar and stir until the sugar dissolves.

  6. Turn off the heat, transfer the champorado onto individual serving bowls, and drizzle with evaporated milk and condensed milk to taste.

    Serve hot, and Enjoy!
