Preparation:
Prepare the chicken wings, cut into serving pieces, wash, and drain.
Season the chicken with pinches of salt, rub and massage the salt into it, and let it sit for 10 minutes.
Peel and mince the garlic, then peel and cut the potatoes into cube-sized pieces.
Cooking:
Heat 3 tablespoons of cooking oil in a pan. Fried the potato cubes over medium-high heat until they changed color and the edges turned light brown. Then take it out of pan and set aside.
Note: Pan-frying the potatoes is optional. However, if the dish will not be consumed immediately, this method is preferable to avoid the dish spoiling faster.In the same pan, with the remaining oil, saute the minced garlic until fragrant. Add cooking oil if needed.
Stir in 1 tablespoon of rock sugar or brown sugar until melted. Then put the chicken wings in and pan fry them per side for about 5 minutes on medium heat.
Add soy sauce, oyster sauce, and water. Simmer it for 10 minutes covered over medium-low heat.
Add the pan-fried potatoes. Season it with salt and freshly ground pepper to taste. Adjust as necessary.
Toss in the chopped green onions and remove from the heat.
Take it out of the pan and serve it warm.
