Adobong Pata Recipe (Ham Hock Adobo) – A Rich, Tender Filipino Classic
Adobong Pata, also known as Ham Hock Adobo, is a beloved Filipino dish that takes the traditional adobo to a heartier level. Made with succulent pork leg (pata), this version is slow-cooked until fall-off-the-bone tender, absorbing the rich flavors of soy sauce, vinegar, garlic, and spices.
Why This Dish Stands Out
🔥 Ultra-Tender Meat – The pork leg’s collagen breaks down during cooking, resulting in melt-in-your-mouth goodness.
🍖 Rich, Savory-Sour Sauce – The classic adobo marinade infuses deep umami flavors with a tangy kick.
⏳ Perfect for Make-Ahead Meals – Tastes even better the next day as the flavors intensify.
🇵🇭 True Filipino Comfort Food – A staple in family gatherings, occasions, birthdays and fiestas.
