Preparation:
Let’s make the marinade sauce. In a large mixing bowl, combine calamansi juice or lemon juice, soy sauce, ketchup, garlic paste, salt, and ground black pepper. Add a pinch of all-purpose seasoning granules to taste, if desired (optional). Mix until well combined.
- Debone the chicken, remove the skin, and wash. Then cut them into bite-sized pieces and put the meat into the bowl with the marinade sauce.
- Mix well until combined, and marinate for at least 1 hour, covered. Overnight is better; it is highly recommended to put it in the fridge.
Next, prepare the flour mixture. Combine all-purpose flour, cornstarch, salt, garlic powder, chili powder, and turmeric powder. Mix well until combined. Prepare a bowl of cold or room-temperature water.
- Coat each chicken piece in the flour mixtures, then dip it into the cold water and remove it immediately. Bring the chicken back into the flour mixture and coat it for the second time. Shake it to remove the excess flour. Repeat the process until all the chicken pieces are coated.
Frying:
While coating the chicken pieces, heat cooking oil in a pan over medium-high heat until the oil is hot enough to fry. Gently put the chicken pieces in the hot oil.
Note: Fry it in batches; do not overcrowd the pan to maintain the oil’s temperature to make the chicken juicy inside and crispy outside.Fry them for 10 minutes, or until they turn golden brown and crispy.
Remove it from the pan, use a wire strainer, and then transfer it to a plate lined with paper towels.
Serving:
Serve warm and crispy with a pair of dip sauces of your choice. Share and enjoy the food!
