Preparation:
Clean and wash the chicken wings under running water, then pat dry them using a paper towel and put them in a wide container.
Add salt and pepper to taste and put in the fridge for 1 hour.
In a large mixing bowl, combine all-purpose flour, cornstarch, garlic powder, onion powder, cayenne pepper and salt. Add paprika powder if desired.
Coat the chicken, working one at a time, and shake it to remove the excess flour. Do the same process with all the chicken wings until they are all finished.
Frying:
In a wide pan or wok, heat cooking oil over medium heat to a temperature of about 350°F.
Note: Heat a deep pan of 2" cooking oil to avoid burning the button of the chicken when frying.Working in batches, fry the chicken for 10 minutes, or until deeply golden and cooked through.
Note: For extra crispness, double fry the chicken wings if desired. But resting the wing is required after frying for 10 minutes before frying again for the second time.Once cooked, use a slotted ladle or wire strainer to transfer the fried wings. Put them on a plate lined with paper towels.
Serving:
Serve them warm and crispy with your desired dipping sauce. Enjoy!
