Cleaning
Use a knife to scrape any stray hairs from the pig leg and cut the nails. Cut skin few slits on each side. Then, thoroughly wash it.
Boiling
In a large casserole, Pour water in. Put-in salt,garlic, peppercorn,bay leaves,star anise and vinegar, stir until salt to dissolve.
Add the whole pork pata in the cooking pot. Cover and bring to a boil.
Simmer 45 minutes or an hour until the leg becomes tender.
Remove the tender leg from heat. Drain in a colander and set aside until the temperature goes down.
Frying
Before frying the tenderize pork leg, season with ½ tbsp. salt and ½ tbsp. ground black pepper, rub it around the tender pork leg. Let sit for several minutes.
In a large cooking pot pour in cooking oil 5 to 6 cups or even more than enough to deep fry the pork leg, then turn on heat.
When the oil is heated enough to cook with, gently add the boiled pork leg to deep fry.
Continue cooking in medium heat, turning the pork leg as needed, until golden.
Turn off the heat. Remove the pork from the cooking pan and place it on a wire rack to drain the excess oil.
Allow it to rest for several minutes before chopping. Serve alongside a dipping sauce.
Dip sauce
In a small mixing bowl combine vinegar, vinegar,soy sauce, minced onion, chopped Red chili and chopped green onion.
Add salt and pepper to taste, stir and serve.
