Preparation:

  1. Peel off the skin of the potato, or leave it unpeeled. Cube them into small pieces.

  2. Wrap it in a thin foil and bring it to a boil until tender. I highly recommend steaming the potatoes if you have a steamer.

  3. Once tender, remove it from the heat and set it aside.

  4. In a mixing bowl, crack 4 to 5 fresh eggs. Season with salt and a pinch of ground black pepper to taste. Beat them.

  5. Add the small cubes of potato. Then gently mix, and it's time to cook.

Cooking:

  1. In a small pan, heat 2 to 3 tbsp. of olive oil and gently pour in the mixture. Scrape it on top to make it even.

  2. Cover with a lid and cook for a couple of minutes over low-mid heat.

    Note: Check it from time to time to avoid the bottom of the tortilla getting burnt.
  3. When the bottom of the tortilla changes color to golden brown, flip it. Use another pan or even a circular plate to flip it.

  4. When it is flipped, add the grated cheese on top of it. Cover it again and cook until the cheese is lightly melted on top.

  5. When cooked, remove it from the heat and place it on a cutting board.

  6. Garnish with extra cheese if you want. Add finely chopped parsley or spring onion, slice it and serve it.
