Peel the sayote and cut into small pieces, then peel, mince, and chop certain spices.
In a pan, heat 3 tablespoons of cooking oil. Saute the garlic until aromatic, then add the onion and saute until soft. Add the chopped tomatoes, if using.
Stir and add a small amount of water and 1 chicken broth cube of bouillon. Cover the pan and simmer it for 3 to 5 minutes, or until the sayote is tender.
While simmering, whisk the eggs in a small bowl and add a pinch of salt to taste. Stir the beaten eggs into the vegetables in the pan.
Season with salt and freshly ground black pepper to taste. Stir and cook for a few seconds. Taste it and adjust as necessary.
