Inihaw na Pusit: The Ultimate Filipino Grilled Squid Feast
Nothing captures the essence of a Filipino summer quite like Inihaw na Pusit – plump, tender squid grilled to perfection over glowing charcoal. This quintessential seafood dish transforms simple ingredients into something extraordinary, with the smoky aroma of the grill enhancing the squid’s natural sweetness. Unlike its saucy counterpart adobong pusit, this version lets the fresh flavors shine through with minimal fuss but maximum impact.
The Art of Perfect Grilled Squid:
🔥 Stuffing Magic – The classic trio of onions, tomatoes and ginger stuffed inside does triple duty:
- Keeps the squid moist during grilling
- Infuses delicate flavor throughout
- Creates an instant side dish when the squid is opened
Pro Grilling Techniques:
- Prep Matters – Clean thoroughly but leave the skin on for better texture
- Charcoal is King – That smoky flavor can’t be replicated with gas grills
- Timing is Everything – 2-3 minutes per side prevents rubbery texture
Serving Traditions:
🍋 Classic Sawasawan – Spicy vinegar with lots of garlic
🍚 Perfect Pairings – Garlic rice and ensaladang talong
🍻 Pulutan Perfection – Ideal with ice-cold beer
Why This Beats Adobong Pusit:
✔ Lighter, fresher summer vibe
✔ Showcases the squid’s natural sweetness
✔ No messy sauce – perfect for outdoor eating
Chef’s Secret: For extra tender results, massage the squid with calamansi juice before grilling and always score the inner side in a crosshatch pattern.
This isn’t just food – it’s an experience. The sizzle as it hits the grill, the dramatic presentation when sliced open, and that first bite of smoky, slightly charred tentacle… pure Filipino seafood heaven. Perfect for beach picnics, backyard barbecues, or when you’re craving a taste of summer any time.
Pro Tip: Look for medium-sized squid (about 6-8 inches) – they’re more tender than giants and more substantial than small ones.
