Awesome kalderetang Batangas Style dish

Kalderetang Batangas, also known as Batangas-style Kaldereta, is a unique and flavorful variation of the classic Filipino kaldereta that stands out for its distinct preparation and ingredients. Unlike the traditional version that uses tomato sauce, this Batangas-style recipe relies on a rich blend of spices, soy sauce, and vinegar to create its signature taste. Originating from the province of Batangas, this dish is a local favorite and a testament to the region’s culinary creativity. It’s a hearty and comforting meal that’s perfect for family gatherings, fiestas, or any special occasion.

The dish typically features beef or goat as the main protein, which is first marinated in a mixture of soy sauce and vinegar to tenderize the meat and infuse it with deep, savory flavors. The marinated meat is then sautéed with aromatic garlic and onions, creating a fragrant base that enhances the overall taste. It’s simmered slowly until the meat becomes incredibly tender, allowing the flavors to meld together beautifully. To elevate the dish, grated cheese is added towards the end, giving the kaldereta a creamy, cheesy texture that’s utterly irresistible.

What makes Kalderetang Batangas truly special is its rich and complex flavor profile. The combination of soy sauce, vinegar, and spices creates a savory and slightly tangy sauce that pairs perfectly with the tender meat. The addition of cheese adds a luxurious creaminess, making the dish even more indulgent. It’s typically served with steamed rice, which helps to soak up the delicious sauce, making every bite a satisfying experience.

This Batangas-style kaldereta is not only delicious but also versatile. It’s a dish that can be enjoyed on ordinary days or served as the centerpiece of a festive meal. Its robust flavors and comforting qualities make it a favorite among both locals and visitors alike. If you’re looking to try a new twist on a Filipino classic, Kalderetang Batangas is a must-try. Its cheesy, saucy, and creamy goodness is sure to make it a standout dish on your dining table!

Instructions

Prep work:

  1. Cut the meaty beef into serving pieces and put them in a large bowl.

  2. Add vinegar, soy sauce, and ground black pepper to taste. Mix well until combined, and let marinate for at least 30 minutes to an hour.

Cooking:

  1. In a large pan or wok, melt the butter, saute the garlic until aromatic, then add the onion and keep sauteing until soft.

  2. Gently add the marinated beef meat and set aside the sauce. Stir and cook the beef for 3 minutes, then add the marinating sauce. Stir and cook for a minute.

  3. Add enough water to cover the meat and bring the liquid to a boil.

  4. Cover and simmer over medium-low heat for 40 to 45 minutes, or until the beef gets tender.

Note: Regularly check and add water as necessary until the meat gets tender.
  5. Once the beef is tender and the liquid has reduced to half, it's time to add the liver spread and stir.

  6. Add the dried red chili for a spicy taste, if desired. Keep cooking until the liquid turns into a creamy sauce.

  7. Adjust the saltiness according to your taste. Add more salt if needed.

  8. Add in the gated cheese; keep cooking for a couple of minutes until the cheese has melted and the sauce has thickened.

  9. Taste it and adjust as necessary.

  10. Turn off the heat and transfer the dish. Serve with a bowl of warm rice. Enjoy!
