This peanut tikoy roll is a delectable sticky rice treat with very appealing looks. It's delicious and flavorful with a perfect blend of peanuts.

Instructions

  1. In a large mixing bowl, whisk the glutinous rice flour and white sugar. Add water and mix until well combined.

    Note: Add a few drops of vanilla extract or essence to taste, if desired.
  2. Add condensed milk and whisk well until it becomes smooth butter.

  3. Pour the tikoy mixture into a rectangular mold or disposable aluminum foil lined with greased plastic cling wrap.

    Note: Divide the mixture into the prepared mold with ½ inch thick batter.
  4. Place in a prepared steamer and steam for 20 minutes or until an inserted toothpick comes out clean.

  5. Then remove it from the steamer and let it cool down. Steam them in batches if necessary.

  6. Prepare a baking mat or chopping board with cooking spray, and then tip over the tikoy onto the surface with cling wrap.

  7. Flatten the tikoy, use a kitchen towel, and press gently on top until it slightly expands in width.

  8. Remove the kitchen towel and plastic cling wrap. The tikoy is ready for peanut filling.

  9. Fill the piping bag with peanut butter, then pipe a line of filling along one side of the tikoy, close to the edge.

  10. Roll the tikoy into a cylindrical shape according to your desired size. Make sure to seal the filling, then cut along the length of the rolled rice cake. Do it until all of the rice cake is used.

  11. Cut the rolls into serving pieces, then dredge each piece in crushed roasted peanuts.

  12. Arrange them on a serving tray. Repeat with the remaining rolls.
