Preparation

  1. Crack 2 large fresh eggs. Separate the egg white from the yolk. Put it in a separate bowl.

  2. In a mixing bowl, put the egg white and whisk it, then add white sugar in the middle of whisking.

  3. Continue whisking it in for a couple of minutes until stiff peaks are reached. And set it aside.

    Note: You can use an electric mixer if you have one. But a wire whisk works too.
  4. In a separate bowl, beat the egg yolk. Sprinkle it with salt to taste and add white sugar. Set it aside.

Cooking

  1. In a pan, melt unsalted butter over medium low heat.

  2. Pour in the beaten egg yolk and allow it to cook a bit until not runny.

  3. Place the beaten egg white on top of it. Spread it and make it as even as possible.

  4. Allow to cook for 2 minutes under a lid cover. Open the lid, then add 2 tablespoons of grated cheese on top.

    Note: You can add more cheese, as much as you want.
  5. Add chopped green onion (optional). Then cover the lid again and cook for 5 minutes.

  6. Open the lid and scrape around. Shake the pan to let the omelet slide in pan.

  7. Remove it from the heat and place it on a cutting board. Cut in half and fold it over.

  8. Slice into serving pieces, garnish with grated cheese and chopped onions, and serve. Happy cooking, share and enjoy!
