In a large mixing bowl, combine the pata slices, soy sauce, and black pepper by hand. Then marinate it for at least 1 hour.
In a pan, heat the cooking oil over medium heat and add the marinated pork pata.
Cook the meat until golden brown on both sides. Set aside the fan-fried pork pata from the pan.
In the same pan, saute the garlic and onion. Return the pan-fried pata to the pan.
Add the marinade sauce, stir, and let it boil. Pour in the water and add the peppercorns and bay leaves.
Cover and simmer over low heat for an hour.
Note: Stirring occasionally is required to cook the pata evenly.Add the vinegar and sugar and cook for 2 minutes without stirring.
Add the lechon sauce, banana blossoms, and ground black pepper and stir.
Simmer for another 5 minutes, or until the meat is soft and the sauce has reached the desired consistency.
Adjust the taste if necessary before serving.
It is ideally served with a serving of steaming rice.
