In a bowl, combine cubes of pork, soy sauce, calamansi juice, and ground black pepper. Mix well and marinate for a minimum of 1 hour, or overnight in the fridge for better results.
In a pan, heat the cooking oil over low-medium heat. Pan fry the cubed potatoes. Set aside after they have been pan fried.
In the same pan, saute the minced garlic until aromatic. Add the minced onion and saute until translucent. Add the marinated cubes of pork and saute for 2 minutes until it changes color.
Pour in the marinade sauce and bring it to a soft boil. Add the tomato sauce and water. Bring it to a boil.
Add a broth cube and stir. Cover and simmer for 45 minutes, or until the pork meat is tender.
Add the pan-fried cubed potatoes, sliced red bell pepper, and sliced green bell pepper. Stir.
Season with salt and sugar, to taste. Adjust the taste according to your preference. Cook for a few minutes, and it’s done.
Transfer to a serving bowl and serve. It’s best to eat it with warm white rice. Share and enjoy eating.
