Preparation:
Prepare the shrimp by deveining them and removing the shell right up to the tail.
Tips: A tooth pick is a great and inexpensive alternative tool to devein the shrimp.Next, make 4 to 5 slits along the "belly" of each shrimp. This will prevent them from curling up during frying.
Transfer to a container and season with salt and sugar to taste. Add lemon or calamansi juice. This will make the shrimp juicer and plumper. Mix.
Set it aside or chill it in the fridge for at least 20 minutes.
Prepare the batter. In a mixing bowl, mix together the dry ingredients. Combine the flour, cornstarch, baking powder, salt, and pepper. Then crack egg and pour in ice-cold water. Stir it in but don’t over mix.
Cooking:
Heat vegetable oil in a skillet over high heat.
When the oil is hot enough, dip the shrimp one by one in the batter mixture and gently drop them into the hot oil.
Fry for 2 to 3 minutes per side, or cook tempura until golden in color.
Remove the tempura from the hot skillet and transfer it to a plate lined with paper towels.
Serve the shrimp tempura crisp with the tempura sauce of your choice.
