Preparation:

  1. Clean the tilapia fish; remove the scales and innards. Wash thoroughly and pat dry.

  2. Make a few slits in the fish's body (score). Sprinkle it with salt to taste and rub it into the fish. Set aside.

  3. Peel, mince, and chop the spices needed for the recipe.

Cooking:

  1. Heat cooking oil in a pan over medium heat. Fry the tilapia fish until golden brown, one side at a time. Set it aside when it’s cooked.

  2. In another pan, heat cooking oil for sauteing over medium-low heat. Then add the diced onion and saute it until translucent and soft.

  3. Add minced ginger and saute for a few seconds. Add the minced garlic and saute until aromatic.

  4. Add the diced tomato and saute for a few minutes. While sauteing, gently mash it until soft.

  5. Add soy sauce, warm water, and chili flakes. Stir and bring to a soft boil. Season with salt and ground black pepper to taste. Stir and add sugar to taste.

    Note: Sugar will balance the taste; adjust accordingly.
  6. Add finely chopped green onions. Stir it and taste it. Adjust the taste according to your preference. Add more seasoning as necessary.

  7. Add the fried tilapia fish. Submerge it in the sauce and simmer for a few minutes.

  8. Meanwhile, crack two fresh eggs and beat them. Pour the beaten eggs in the pan over the fish.

  9. Allow the egg to cook slightly, then stir. Turn the heat off and transfer to a serving dish.

  10. Serve warm, sarciadong tilapia goes well with a cup of steaming warm rice. Share and enjoy eating.
