  1. Skinned, seeded and dice the pumpkin.

  2. Steam them, once cooked remove from steamer while hot.

  3. In a large mixing bowl mashed pumpkin while hot. Add oil and sugar. Mix well.

  4. Add in rice flour into the mashed pumpkin and mix together.

  5. Add in the glutinous rice flour and add water as needed and knead till it form a dough.

  6. Divide dough into 12 portions and the peanut butter fillings divide into 12 portions.

  7. Wrap the pumpkin dough with peanut butter and roll it into a ball and then flatten.

  8. Dredge them in a sesame seeds; repeat the process until all are finished.

  9. Heat a little cooking oil in a frying pan and pan fry the pancake both sides till golden brown and cooked.

  10. Transfer it to a serving plate. It is best to serve hot, pair with your favorite cold refreshing drinks.
