Preparation:
Devein, detach the shrimp's head, and remove its shell. Wash it and put it in a bowl. Set it aside.
Dice the tomato and chop the green onion.
Cooking:
In a pan, heat vegetable oil over medium-low heat. Pan-fry the shrimp one side at a time until it turns light orange in color.
Turn off the heat and set aside the shrimp for a few minutes to cool.
In a bowl, crack three eggs. Add water, diced tomatoes, and chopped green onions. Add pinches of salt and freshly ground black pepper to taste. Whisk until well combined.
Add the pan-fried shrimp to the egg mixture. Mix everything together.
In the same pan, heat a tablespoon of cooking oil, pour in the egg mixture, and cook over low to medium heat.
Allow the mixture to cook until a bit hardened, then gently scramble the mixture.
Taste it and adjust as necessary. Turn the heat off.
Serve warm. It goes well with a bowl of steaming rice.
